You do not want a chemical reaction where you do not control the rate of CO2 production, you want to maintain a level of CO dissolved in your water, two totally different things. Steady levels of CO2 are what is required.

Output fluctuation from DIY fermentation is the biggest single issue with that process. Pressurized gas is more controllable. Using multiple DIY bottles can help even out tank levels, but rarely with the ease of pressurized gas. Chemical reaction are not as controllable.
