Luckily my camera can AF and lock on pretty quickly. Shooting with a small aperture also helps because it increases the depth of field. I can be a bit off and it won't kill the entire pic. I can shoot smaller fish with a wider aperture, but with larger fish it's too hard to get the entire thing in focus.

Nikon SB-600. I could have gone with a normal slave flash, but the TTL option on the 600 is very nice for general photos. I shoot fully manual (camera and flash) on fish. I'll probably go ahead and pick up a couple of cheap slave flashes from B&H or somewhere for a fill flash.
